ERVESA SMO® (E494 Sorbitan Mono Oleate) is a lipophilic emulsifier composed of partial esters of sorbitol and its anhydrides with vegetable-based oleic acid. It may contain minor amounts of free fatty acids, sorbitol, and isosorbide esters. Due to its strong affinity for fats and oils, it is widely used in combination with polysorbates to form stable emulsifier systems and to control oil crystallization behavior in various food applications.
