ERVESA SSL® (E481 Sodium Stearoyl Lactylate) is a functional emulsifier consisting of a mixture of sodium salts of stearoyl lactylic acids and their polymers, with minor amounts of sodium salts of related fatty acids. It is manufactured through the controlled reaction of stearic acid and lactic acid. SSL is widely used in bakery and cereal-based applications due to its strong dough-strengthening, emulsifying, and crumb-improving properties.
