ERVESA MATEM® (E472f Mixed Acetic Tartaric Acid Esters of Mono and Diglycerides) is a multifunctional emulsifier produced from the esterification of acetic and tartaric acids with fatty acids derived from vegetable oils. The product may contain minor amounts of free glycerol, free fatty acids, free tartaric acid, and free glycerides. It may also include mono- and diacetyl tartaric esters of mono- and diglycerides. MATEM is primarily used in bakery applications to improve dough performance, volume, and shelf life.
