SYNONYMOUS: Stearyl Palmityle Tartarate

CLASS  :    Emulsifier

DESCRIPTION AND INGREDIENTS  : They are esters of vegetable oils with stearyl acid, palmitic acid and tartaric acid. They contain mono esters and diesters.

It contains free fatty acids and total tartaric acids.

APPEARANCE : Cream white fluid powder. It has a slight acidic smell.

SOLUBILITY : It can be decomposed and dispersed in water.


·        Generally it is used as an emulsifier and stabilizer agent.

·        It is used as an emulsifier in extreme oil use in leavened products.

·        It glorifies inner pore structure of the product.
